Is there a way to improve the quality and size of images from screen grabs in Vegas pro?

You are probably doing something wrong as usually they are at your source material resolution and Best quality.

Make sure your Preview is set to "Full" at whatever quality it is on.  When creating an image Vegas automatically switches to "Best" but it doesn't alter the size.  Hence you need to be on "Full".  Also does your Project size match your source Media size?

As well as what Eric has said, also look at these settings.

Open Project Properties (cog above Preview window).
Set Full Resolution Rendering Quality = Best
Set Resample Mode = Disable Resample

When saving then actual Snapshot, using .png instead of .jpg, often produces a sharper image.
